Dr. Ankures Bhattacharya, Assistant Professor of Fish Processing Technology at Centurion University, Odisha, India, is a committed researcher with expertise in fish waste valorization, fish quality assessment, and the development of value-added fish and fishery products. He obtained his postgraduate and doctoral degrees from the Faculty of Fishery Sciences, West Bengal University of Animal and Fishery Sciences, Kolkata, India. His research primarily focuses on the in vitro bioavailability of essential minerals, particularly calcium, derived from nanoparticle synthesis using fish waste; characterization of nanopowders obtained from fish processing by-products; and their fortification to address nutritional deficiencies. Dr. Bhattacharya has extensive research experience in fish processing and preservation techniques, quality assurance, and the development of fish-based products, alongside strong expertise in scientific literature review and technical report writing. He has published numerous research articles in reputed national and international journals. Additionally, his academic interests include advanced techniques such as hyperspectral imaging for fish quality assessment, nutrient fortification through waste valorization, and cytotoxicological studies of nanoparticles synthesized from fish waste materials. He has also obtained design patents for innovative technologies, including a fish vending kiosk and a solar-powered fish descaling machine.
